This is what I eat.

Potato wedges and veggies.
This is a lazy man’s meal. Cut up a couple of potatoes into wedges. Toss ’em in olive oil with some paprika, cumin, rosemary, and plenty of salt. Spread out on a sheetpan and bake in the oven (I use 350 for everything) for a solid 20 minutes or until they’re soft. Meanwhile toss some veggies in the same bowl with olive oil and other stuff. Dump those out onto the sheetpan with about 15 minutes left on the potatoes. Dinner is served.

Stir-fry veggies and chard
If you don’t eat yer meat, you won’t get any iron! How are you going to get yer iron if you don’t eat your meat? Leafy greens.
- frozen veggies
- red chard
- thai jasmine rice
- sweet chili sauce
Saute’d the veggies in sunflower oil then dropped in the chopped chard just to wilt it a little bit.

Spicy Chickpea Pasta
This one is nice and easy. One pot to boil the pasta and one pan to saute the veggies.
- pasta (whole grain is what I used)
- 1 can garbanzo beans
- some bell peppers and spinach
- red pepper flakes, basil, oregano, garlic powder, olive oil
- nutritional yeast*
- some marinara sauce
*nutritional yeast gives the pasta a little bit of a cheesy flavor.

"This Shit is Good" Salsa
The photo is from a HUGE batch I made for several people. I’ve ratio’d down the ingrediant list below for a normal couple’s needs.
- 3-4 tomatoes (cored)
- 3-4 jalapenos
- 2-3 tomatillos
- 1 habanero
If you’ve got a grill (flames preferred but george foreman will do) grill all the veggies above until the skins are a bit charred. Drop ’em in a pot with just enough water to make ’em float and boil the shit out of them…we’re talking 20 minutes or so. Dump everything including water into a food processor and go to town. Add some salt while it’s puree-ing everything. That’s it.
